Here at The Isle of Wight College we work with a number of employers, in a vast array of industries. A fantastic opportunity has arisen to work for The Royal Hotel as a Trainee Commis Chef.

This is a unique opportunity for a Trainee Apprentice Commis Chef to join the kitchen team at this exquisite, luxury hotel.

Surrounded by cliffs and windswept headlands forming an especially beautiful part of the coastal footpath and English Channel, Ventnor possess an unrivalled and enduring beauty.

The Royal Hotel is nestled into exotic south facing gardens overlooking Ventnor’s stunning coastline.

Built in 1832, The Royal is one of the oldest hotels on the island and shares the rare privilege of being one of only 30 establishments to be listed in every Michelin Guide since it was first published in 1911. The Royal was also the first hotel on the island to achieve Four AA stars and has held 2 AA Rosettes for excellent food for over 20 years.

Tasks and Responsibilities will include:

Under the general guidance and supervision of the Head Chef, the successful kitchen team member will assist in the preparation and service of all sections in the kitchen.

  • To work with the Chef De Partie and other members of the Brigade to maintain high standards in the quality of food its preparation and presentation
  • To work in all areas of the kitchen depending on the daily needs of the Head chef
  • To inform the Chef De Partie, on a daily basis, about all relevant operational and personal issues
  • To make sure that all food is prepared on time, and to the standard required
  • Maintaining cleanliness in all required areas, including fridges and freezers
  • To make sure the work area remains clean and tidy at all times with particular care being shown at the end of a shift, making sure that all food is properly wrapped, labelled and stored in the correct manner to avoid wastage and spoilage
  • To comply with all statutory Food Hygiene and Health and Safety regulations
  • To report any equipment in the section which requires repair or maintenance
  • To follow all instructions from Line managers and to give instruction and training to Trainee Chefs

Qualifications Required:

  • Ideally GCSE Grade C/4 or above (or equivalent qualification) in English and maths.

Apprenticeship Standard:

  • Commis Chef Level 2 Apprenticeship Standard
  • Apprenticeship duration will be between 12 – 15 months + 3 months for End Point Assessment
  • Functional Skills – if not already achieved a GCSE C/4 (or above) in maths and English (or equivalent qualification) 
  • There is a requirement to complete 20% off job training, College attendance will contribute but time spent either learning something new, other courses or any support work you that is not your usual role will also be counted

Working Week:

  • Up to 40 Hours a week over 5 days which will include evenings and Weekends
  • One day per week to be spent at the college
  • The successful candidate will be on a probationary period reviewed as per company policy

The current National Minimum Wage (NMW) rate for apprentices is £4.30 per hour. This applies to 16-18-year-old apprentices and those aged over 19 in the first year of their Apprenticeship. For all other apprentices the National Minimum wage appropriate to their age applies. The Minimum Wage for Apprentices applies to time spent on the job plus time spent training.
